The French eat more leeks than us and in my opinion are better off for it. Leeks are one of my favorite ingredients to cook with. Throw in some anchovies and tarragon and I am always going to be happy. These are braised leeks in white wine and cream and they are amazing as a side dish or even on their own for lunch with some crusty bread.
