Kofte is Turkish comfort food, and one of our favorite things to make in bulk, freeze and eat whenever the mood strikes us. There are as many recipes for kofte as there are families in Turkey. This one is ours. They can be cooked in the oven, but my favorite way is to fry them in oil. They're crispy on the outside and soft as angel food cake on the inside.
