đChristmas Ginger Ale Gammon đ Boil gammon in 1L water + 1L ginger ale with garlic, bay leaves, star anise, mustard seeds, cinnamon sticks, peppercorns, carrots, onion, celery, apple, rosemary & thyme. Simmer for 1 hour, wrap in foil, and rest overnight. Next day, remove skin, score fat. Glaze with olive oil, honey, ground ginger & wholegrain mustard. Roast at 180°C for 1 hour.
